SUGGESTIONS FOR USE
To prepare a sauce or emulsion, soak the pulses in water for 12 h. Boil the product in water or milk.
Mix the compound with 2/3 of cooking liquid and 1/3 of extra virgin olive oil, then blend in a blender (at least 16,000 -18,000 revolutions/min.) to emulsify the ingredients. Adjust the texture and flavour of the sauce to taste changing the percentages of compound/cooking liquid and extra virgin olive oil.
