CHARACTERISTICS
The product has a pleasantly intense fresh pulse smell.
The specific enzymatic composition of green peas is revitalized by the germination process and it activates the  phytases present in the seed. When added to common wheat flour, it improves the amino acidic profile and gives a more balanced finished product. The product can be used to prepare soups, purées or white chocolate ganache to decorate cakes or muffins.
SUGGESTIONS FOR USE
To prepare a sauce or emulsion, soak the pulses in water for 12 h. Boil the product in water or milk.
Mix the compound with 2/3 of cooking liquid and 1/3 of extra virgin olive oil, then blend in a blender (at least 16,000 -18,000 revolutions/min.) to emulsify the ingredients. Adjust the texture and flavour of the sauce to taste changing the percentages of compound/cooking liquid and extra virgin olive oil.
