CHARACTERISTICS Flour has a pleasantly strong wheat smell. The specific enzymatic composition of wheat is revitalized by the germination process and leads to an accelerated fermentation and better performance of the dough over time. The finished product is lighter, with a good wheat smell, better volume development and crispier crust. Mixed with Petra it shortens the proving times of doughs.
ADDITIONAL INFORMATION Germinated and heat stabilized common wheat flour, rich in vitamin B1, phosphorous, magnesium and iron, as well as source of vitamin B3 and B6, with high percentages of soluble (+ 27%) and insoluble (+11%) fibre.
